Our tsukudani has exquisite combination of the crunchy texture of large-size cod roe and finely sliced Hokkaido Hidaka kelp. In consideration for health, it is cooked with less salt, so you can enjoy umami (delicious taste) of the ingredients even more. It is good to eat as is, or it also suits well with tea on rice and rice balls. It also widens the flavors of Western style dishes such as potato and roe salad, depending on your idea.
People do not eat tsukudani very often these days. But we hope that tsukudani will be focused more as it was selected for the “Selected 100 Souvenirs from Ota.” Our tsukudani is not the old-fashioned tsukudani which is chewy and salty. We will continue to develop healthy tsukudani that matches the current diet.
